If you’re going to have Plum Pudding, you’re going to want a lot of Brandy Butter smothered on top of it, to make it as delicious as possible. The following recipe comes from Mrs. Sharp’s Traditions by Sarah Ban Breathnach:
First, the ingredients. In order to make a high quality brandy butter, you’re going to want to use the following ingredients:
1 cup confectioners’ sugar
1/4 cup brandy
To make brandy butter, we’re going to first want to allow the butter to warm to room temperature. When this happens, the butter will be more malleable, so we will then beat it vigorously until it is creamy. Then, we will gradually beat in the confectioners’ sugar, and add in the brandy a tablespoon at a time. When you are finished making the butter, store it in a refrigerator.
